    That cap should have small holes on the very top, it's so gas comes out but bigger things don't fall in. Does yours has some? If not I would take a safety pin and make a half dozen holes. - ISM NRP

    It's not so much about putting in added water. Boil off rate is not a fixed value. It has to do with MANY variables: pot hight and width, actual power of your burner, humidity, temp, axial positioning of the moon.... A lot of stuff. It's as easy as when you're done and you're off by whatever...

    I highly discourage having un-diluted StarSan touch anything other than it's own contained or water. That stuff is quite acidic. I'm not sure about those stains, try barkeeper a friend. And just don't do that again - ISM NRP
