    Small, sweet mead

I like sweet meads, but don't like the high alcohol. I like low alcohol meads, but don't like the dryness. What to do?!?!?! Experiment!!!!! Today I'm starting a mead which should end at 5.8%ABV and a final gravity of 1.02. 2 liter batch: 10oz clover honey 3oz honey malt 6oz...

    Repitching after a "killer yeast"

I'm making a peach/apple/white grape wine. I need to get it up over 20%. I was planning on using K1-V1116 because it accentuates the aroma of peach do well. But then I read it is a 'killer yeast' strain and will kill any other yeast in the must. Will the killer protein remain after the...

Is 24 days a possible time frame to get a session stout from grain to glass? Including bottle carbing? I know I should have started it earlier, but if I'm doing it it needs to be done by 11/20

    When to add "flavor" honey

I have a mead going, that I started about two months ago. Starting gravity was 1.110 Three pounds of wildflower honey for a one gallon batch. I will be adding 500grams (like 17 1/2 oz) of Linden honey. Hoping that the flavor and aroma of the added honey will shine as the "honey-ness" of...

    Black currants

I live on the west coast, and apparently they are only grown in the north east. I'm looking for fresh picked, unwashed, frozen black currants. I want to make a wine starter and attempt to culture the yeast from the currants. The cheapest I've found on line is $46 including delivery.

It's hard to make a beer go flat while tring to keep it from oxidizing

Because I'm a mad scientist, and my brew club has categories for "things". I am trying to get a weiss beer to go flat, so I can infuse it with spices, then re-prime it and let it battle carb. It is not easy to get a beer to go flat, when you're trying to keep it from oxidizing at the same time!

    Trader Joe's Double Bock

Just had one of these over the weekend. It was called a Winter Brew, and said it was a double bock. For those of you who have had it before: Was it a decent representation of the style? I had two TJ beers, the Winter Brew and a Dunkelweisse. The wheat beer was way too roasty in my opinion...

    Stupid question re: FG

If you let a commercial beer go flat and test the gravity, is that a true representation of what the FG of the beer is/was?

What to do with sub-par beer

With sub-par wine you make sangria, or hippocras. Is there anything similar to do with sub-par beer? Make a shandy I guess. But I'm looking for better options.
