Projected mash pH too low - need fix

@GavinC - that was my first thought too. I re-input all of the data and my water profile and I got the same results. @mabrungard - Beersmith has me mashing with my typical 1.25qu/lb. I have a 10 gal rubbermaid cooler. Given the 22 lb of grain and almost 7 gal of water, I'm not sure if I...

@Singletrack - how do you steep grains? In the sparge? I've never done that before.

Projected mash pH too low - need fix

Hi folks, I just started using Bru'n water and plugged my water profile in. I'm brewing a RIS on Friday that I'll use for my Christmas beer this year. It has 3.5 lbs (out of 22) of roasted malt. Bru'n water predicts that the mash pH will be 4.6. I know that's way too low, but the...

    Big christmas beer

So I was planning on adding 1 lb sugar in the boil and then 1 lb sugar after about 75% attenuation. I usually treat my water with ~4g of gypsum and CaCl2. JJeffers09, I like where your head is at. I wasn't planning on using any spices, but I might treat lightly and see what might compliment...

    Big christmas beer

I'd like to brew my Christmas beer now to age what I plan to be a 12% beer. I've never brewed anything this big before and I'd like some help with the grainbill. This is a nondescript winter warmer brewed in a Belgian style, but not to any particular BJCP category. Here's the grain bill...

    Brown Ale help

I know, I know... a brown ale. It's not that exciting. I've got about 40 all grain batches under my belt, but not one has been a brown ale. I feel like I'm missing out. I'm aiming to make a rich, yet hoppy, brown ale - perhaps a hoppier version of Brooklyn Brown. A touch of chocolate, a...

    Red Ale input/feedback

A touch of roasted malt (or Carafa dehusked) should be enough to give you the red you're looking for. If you want some husky maltiness to stand up to the hoppiness, consider about .5 lb of amber malt.

    Red Ale input/feedback

That's a LOT of crystal malt. I'm assuming you're making a 5g batch - aim for no more than 1 lb of crystal - either one variety or combined. The almost two pounds you propose would make it cloyingly sweet, even with all of the hops you want. A combination of .5 lb of 80 and .5 lb of 40 will...

    Maibock Help

BigEd - Thanks for the feedback! I've been debating the biscuit. I don't intend to dry hop, just give a bit of Tettnang and Hallertauer at flameout.

undercarbed beer = bad gas post?

So no seal leak. I tried the spray test and found no bubbles. I will try Bellybuster's approach.

undercarbed beer = bad gas post?

Yes, single regulator and 4 way manifold. How would this be hurting this keg and not the three others? I've been thinking of getting a secondary regulator for a while. This may be the time.
