    That sounds good. I'll add 4oz of victory since you both agree on it. I like the idea of using victory, i've just seen people and resources say you have to mash it in. I had the carapils in there because I saw it in someone's redhook esb clone. Thamks again for the help.

    This chart says both require mash. Can I really steep these? http://homebrewtalk.com/wiki/index.php/Malts_Chart Edit: I just noticed special roast is listed as adding biscuit flavor and can be steeped. I wonder if a small amount would be a good thing in an esb.

    I'm planning an ESB for my fourth batch. I've got my crystal malts figured out, but I'd like to add a touch of biscuit flavor. Evyen after looking at the malt chart, I'm having trouble finding a grain I can steep instead of mashing that will give me this. Any suggestions?

    Should the roasted barley be steeped for the same amount of time as the other grains? I think I remember reading a post about someone saying they steeped for a shorter amount of time to get the color and not the flavor, but I'm having a hard time finding it the post.

    I took yesterday off to bottle this batch and brew up my second. The smell is completely gone and it tastes really good considering it's flat! I'm excited to see what it's like in a few weeks!
