    Yes you can. In Australia it is quite common to use a ~10 gallon urn (often a Birko or Crown brand) for the boil. Also commonly used for BIAB and HLT. I did my first batch using a Crown urn for BIAB and I love it!

    I think the effects of using a strainer pot may reduce efficiency. When a bag is hung, the resultant compression of the grain helps drain the bag. This might be replicated by vigorous squeezing in the strainer, but likely not as effective.

    Temperature Control

    Keep in mind that specific heat capacity is energy per mass. The volumetric heat capacity is probably more relevant in this case. Water has about 3000 times the heat capacity of air in a given volume.

    I agree that your OG reading was likely off. A pound of DME would not increase it that much, and attenuation that high is quite unlikely. What is the predicted OG once you take the DME into the calculation?
