    2 Yeast Porter

I fermented a porter using US-05 and some Fullers strain I had. I harvested the yeast from the secondary just in case. We'll, the porter turned out great. After letting the slurry settle in a gallon jug, I decanted all but 2 pints. There are three layers in the jars. Since Fullers is very...

    Blue Moon Clone

I'm doing a blue moon clone tomorrow. I stopped by my friendly local craft brewery for some fresh US-05 slurry. They also had some fresh LalBrew New England Ale slurry. The brewmaster suggested trying 50/50 for the blue moon. I'm not shooting for the perfect blue moon. It just sounded...

    Fresh yeast slurry

My fermenters have rotating racking arms. I flush the secondary with CO2 and add whole leaf dry hops. Then it's a closed transfer into the secondary pushing CO2 until I start to pick up yeast/trub in the racking arm. At that point I swirl the primary and push the slurry into a gallon jug. I keg...

    Fresh yeast slurry

The IPA is in the secondary on the dry hops and I kept the slurry from the primary. The slurry has settled out as shown in the gallon jug. I have an 11 gallon 1.054 amber ale on deck. Since there is still some activity in the jug and it smells great, I don't think i should decant. I'm...

    Almost a SMASH

I've tried it with and without. To me there is a noticeable improvement in body and foam retention with the Carapils. Also, that was supposed to be 8oz in the recipe. 8oz is my standard for all brews except some porters and stouts when I use 16oz. Perhaps it's just me, but I like it. It's...

    Almost a SMASH

I use a natural gas direct fired mash tun and recirculate the entire time. The rice hulls help prevent compacting the mash. I consistently get 83.5% efficiency, no stuck mashes, and very clear wort. If I'm using wheat malt and/or flaked oats, I increase the amount of rice hulls. Cheap...

    Almost a SMASH

IBU calculation is 43.6 excluding the dry hops of course. There's about 6 oz. of settled slurry per jar with an active layer on top of the beer. My post boil volume is 11.25 gallons. I'm leaning towards using the entire contents of one jar swirled and pitched.

    Almost a SMASH

Yeah I know. I started the thread with only MO malt. I decided to add some other malts and edited my post. Should have started a new thread with a different name.

    Fresh yeast slurry

Picked up some more fresh yeast slurry today. Williamsburg is a relatively small town but it's a college town and a tourist town. Other than Anheuser Busch, we have 4 craft breweries, a distillery, and a meadery. These are RVA 131 (Fullers) freshly harvested today. Looks like a stout...
