The Hop Shot is actually 5 ML, not ounce. Beersmith does not play well with Hop Shots.

I should be able to drop it a little below ambient if placed on the tile on the far side of the house and draped w/wet towels. It would be interesting to experience the difference in +/- 10 degree (F) fermentation temperature.

I too have used Apollo in Northern Brewers Heady Topper clone. While I am not a hop aficionado, Apollo has not been unpleasant to me.

For those who use Wyeast 1318 London Ale III for a Norther Eastern Style IPA, what is your optimum fermentation temperature? This is my first time brewing a NEIPA and first time using LA III.

Yooper - this is for a NEIPA, where the Chloride ppm is higher to achieve a softer mouth feel.

Scott Janish recommended calcium chloride (195 ppm) & gypsum (74 ppm) as his preferred NEIPA water profile.
