    Hop Butcher: The Jewels In Chicago on a work trip. I’m Im on a mission to hit every MLB park. Today, it is Guaranteed Rate Field in Chicago (White Sox). Not the best ballpark, but definitely the best ballpark beer I’ve ever had. Cheers!

    Brewed a Hefeweizen today. OG 1.049. Did an acid rest and decoction, currently open fermenting at about 64F. I’ll raise it up to 67-68 Monday morning then seal it up. I have a really good feeling about this. Praying for no rhino farts 😝

    Amen. I may go stainless steel conical one day, but for 2.5-3 gallon batches, can’t beat fermenting in a 5 gallon corny keg with a filtered floating dip tube.

    Yeah, I ruined one doing it that way once, but I think I dry hopped after active fermentation. I also think fermenting 3 gallons in a 5 gallon keg may leave too much headspace. Regardless, it is never fun to dump beer - especially heavily hopped $$$ beers.
