    Empty fermenter anxiety

Dude, that is a bummer! I feel for you, you will have almost completely recovered from the addiction by then! I'm hoping to get some more on this week, or maybe in the weekend.

    Help with Food list

Cool, well my suggestions would be : Hoegaarden: Seafood, prawns (shrimp) or scampi, fresh fish, mussels cooked in a thin sauce using white wine, garlic and perhaps some celery..... basically some clean, not too strong flavours. Perhaps a really mild thai inspired dish (prawn toast? fish...

How many brews are you trying for this year?

I'm hoping to do 2 batches a month, but I've got a pretty busy first quarter planned so I'll be happy if I get to 20 this year. That said, I am planning on getting all set up for AG in the later part of the year, so that may slow me down a little too........

    Help with Food list

What beers are you going to serve? French fries with mayo or else mussels (do you even get them there?) are pretty traditional Belgian fare...... but if you can give a list them perhaps we can suggest some specific combinations?

    Empty fermenter anxiety

So, I was just wondering if I am the only one. I haven't had any brews on the go since I last bottled about 3 weeks ago. Unfortunately I've just been a bit too busy (or lazy) to get any done, which is unforgivable as I'm still doing canned kits, so it's not like it even takes me that long. It's...

    Black Rock and DME

Hi Darren, from what I understand you can replace sugar with DME 1:1, it's liquid malt extract that is substituted at a different rate. With regards to the yeast, as long as you keep within the temperature ranges stated for it you should be all good. The difference will be in the flavour at the...

    plastic vz glass bottles

FWIW I use both. I split about 50/50 plastic and glass, then keep the glass longer and the plastic ones I drink first. This way I've always got a good supply of beer to drink all the time, plus I've got at least a crate of each beer I've brewed in the last 6 months just sitting there.

Primary only proponents: high gravity beer conditioning question

FWIW, I recently did a Doppelbock (well it isn't really a doppelbock, but I won't go into that here....) but I left that in the primary for almost 3 months. I had a taste of it after about 3 weeks in the bottle and I was really happy with it.

Newbie - at the bottling process!! Help!

dontman, the Brewcraft Munic Lager kit is the standard kit they supply with the starter kit at Brewcraft stores. I don't know about the OP's one, but mine just came with the standard "yeast in the top of the can" yeast, and they advise a temperature range of 18-22C IIRC. So it's not really a...

    What the . . . .??? A bottle exploded!

Although it sounds like the crux of the problem is bottling too early, I'm not sure how strong Monteiths bottles would be in the long run, they look a little thin to me. I use swappa bottles, they're wicked strong, and they come in crates, bonus! Also it means that when you have "just one" it's...

    Other hobbies besides brewing?

I get into mountain biking, diving (scuba and free diving)..... mmmmm fresh scallops and lobster washed down with a nice pilsner! And recently summer hockey, which is 6-a-side field hockey, pretty intense, but a heap of fun (yeah, it's coming into summer down here). I'm also an avid cook, and I...

Do spiced beers affect your sleep?

I swear the Epic Armageddon (probably the hoppiest beer in NZ) always gives me freaky dreams!

    Poll: Are you a musician?

I'm definitely not a musician, although I did play guitar for a few years (ages 10-14 or so). I am a big music listener though....

    Foam!

Hi Smokeu, you could try getting the extract mixed with hot water first. I usually use about 4 or 5 litres of hot water to mix the extract then pour that into the fermenter and top with cold from there.....
