    I thought since I did everything wrong last night as far as preparing the yeast, it would take a couple of days to see any fermentation going on. When I woke up early this morning the airlock was bubbling like crazy. Wyeast must be some powerful stuff.

    The recipe says it has an OG of 1.045 so it doesn't seem to be a big beer but I will take your advice and make a starter if my lousy understocked brew shop has any DME. Thanks for the suggestion.

    I have a packet of wyeast Munich Lager. Yesterday I smacked the little packet inside, maybe a liitle too hard. I could hear air slightly seeping out of the package when I squeezed it. I woke up this morning and the package isn't very swollen. Should I get rid of this and start over? Thanks.

    I thought I would brew a batch this evening but the wyeast 1007 smak pac isn't as swollen and others in recent history. It's been 4 hours since I broke the starter but it just isn't there yet. Can I wait until tomorrow afternoon after work to brew or do I have to use the yeast within 8 hours?

    Yeah a did see several recipes with those hops. They varied in ingredient size so much I wasn't sure which to follow. Will I expect this batch to taste like Sam Adams? No probably not but I hope it's at least drinkable. I will probably dry hop with Hallertau mittlefruh as you pointed out.
