That the Lutra beer has a different hop characteristic than the Diamond batch fits with what I've read reported elsewhere - that kveik strains tend to mute hop characteristics a bit during fermentation. I can't say I've experienced this myself since 80% of the beers I brewed last year were...

Look at "brut" recipes. They finish dry because the yeast eats as much sugar as it can get to. Otherwise, maybe consider making some hop water?

I've heard that kviek beers can be difficult to bottle condition. It seems that once the yeast decides it's done, it drops out and it's  done. You may need to try using a different yeast next time like US-05 or something similarly neutral to bottle condition.

FWIW, a friend of mine ended up with a clapped out kegerator and rather than toss it, she had a refrigeration guy fix it. And for less money than I anticipated.

It'll be more difficult for neophytes to dive into the hobby now than five years ago. The explosion in local breweries removed a lot of the need to brew at home and COVID lockdowns pretty much killed off most of the local mom-and-pop brew shops.

Pitch'em in the last five minutes of the boil. You want them in long enough to santize them but not so long that you drive off any volatile aromatics, nor pick up any off flavors.

You'll still make a wheat beer but it may be lacking some of the finer subtle details you were hoping for. It'll probably be just fine although it may have more banana than you expected.
