    Look at "brut" recipes. They finish dry because the yeast eats as much sugar as it can get to. Otherwise, maybe consider making some hop water?

    Slow bottle carbonation Lutra Kveik yeast issue? or temperature?

    I've heard that kviek beers can be difficult to bottle condition. It seems that once the yeast decides it's done, it drops out and it's  done. You may need to try using a different yeast next time like US-05 or something similarly neutral to bottle condition.

    It'll be more difficult for neophytes to dive into the hobby now than five years ago. The explosion in local breweries removed a lot of the need to brew at home and COVID lockdowns pretty much killed off most of the local mom-and-pop brew shops.

    Pitch'em in the last five minutes of the boil. You want them in long enough to santize them but not so long that you drive off any volatile aromatics, nor pick up any off flavors.

    I get nervous when I see wire strung through the air and held with split bolts. If you aren't comfortable with the work, I'd highly recommend calling an electrician out. They aren't cheap but electricity can potentially cause death and mayhem if it's done incorrectly.

    Just a general observation but apparently there's a lot of equipment being offered for sale around DFW. I see it listed here, FB Marketplace, Craigslist; generally around. Just feels like many are giving up the hobby and moving on. I wonder if that's because of the lack of local suppliers...
