    Just put mine into secondary this morning. The sample tasted good, but not as hoppy as I was expecting. I did the extract (full boil with the all-grain hop schedule). This is just my second batch. Can't wait to see what the dry-hopping will add.

    Big Belgian - should I repitch?

    FWIW I just did a SDB with an OG 1.09 and FG 1.02 (78% attenuation). It carbed up nicely, but it took about a month in the warmest room in my house, which was about 75 degrees. I only used about 4 oz. of corn sugar per the recipe, I will up that a bit next time.

    Mudflap, did you prime with corn sugar? I was thinking of using Munton's Kreamy X. This will be my 2nd batch. After that I am going to revisit my first brew (a Strong Dark Belgian)and see what happens. It turned out great, but my head retention and lacing could be better.

    40L is a big pot (about 10 gal.). I assume you will be using a turkey fryer outside as your stove would have a hard time boiling 5+ gallons of water. I steep my grains inside on the stove while my brew pot heats up outside. You don't want to use too much water when steeping your grains...
