    Wyeast 3068 Extremely Tart, why?

    I made a hefeweizen recently with the same yeast and a 2L starter. Not as much banana as I was hoping for, more clovey. It's not tart at all though.

    so i just bottled a hefeweizen to 4 volumes per the calculator I used. I had no idea that 4 volumes would blow a regular bottle, so far so good, no explosions.

    beer from malta goya??

    I added too much water to bring it down to 1.04 for my starter, had to concentrate it. Water wasn't sterile either. That and I wanted to add some yeast nutrient, and it says add to boil with 15 mins left. So I boiled it for 15 mins.

    Wyeast 3068 Hefe, unpleasant odor when drinking

    I know this is about 3068 but with 2565 (kolsch) it had to sit in primary for 4 weeks and it still sort of smelled like sulphur at bottling.     my brew dog sits on the mash tun when I'm not looking. Probably because its warm and covered in towels/blankets. He's a great dane though so I'm a little afraid hes going to knock it over.

    Which book would you buy?

    +1 to gordon strong's brewing better beer. I've only read 3 chapters and have found several things I'm going to change in my process. Yeast was good too but didn't make me change anything about how I ferment.
