    Maris Otter/Cascade SMaSH?

    the recipe looks good, but I'd raise the mash temp a bit. At 151 you'll end up with a very dry beer with not much malt flavor. Try 154 or 155, that should result in a better balance in the finished product.

    I'm with everyone else, Perlicks are the way to go.

    American stout

    Looks like a solid recipe. The only suggestion might be to raise the mash temp a bit. At 150 with US-05 the beer might end up a bit too dry. I would go with 154-156 to get a little more body.

    first all grain batch soon

    When I was converting my cooler to a MLT, I thought the braid would be easier to do than a manifold, so that's what I went with. works great as far as I'm concerned I agree with wildwest - I don't think it really matters which way you go.

    Late C02 addition??

    If you have purged with Co2 - your beers will be fine for a long time - they just won't be carbed. There is no way for oxygen to get in at this point. Relax.

    Please critique this Oatmeal Stout recipe

    for my oatmeal stout (5.5gal), I use only 8 oz of roasted barley and no black patent. I also toss in 12 oz of chocolate malt.

    Recommendation

    +1 to Ed Wort's Haus Pale ale. Also check out Bier Muncher's Centennial Blonde. I always have one of these on tap.

    Apple Pie Recipe

    talk about bringing back memories, this was a staple in college around the hollidays (or whenever we felt like it) We never added sugar to ours, but to each their own. Very tasty/ sneaky stuff.

    replacement for Danstar Winsor

    I would go with US-04. It is a lower attenuating yeast like windsor, plus it flocculates much better - Windsor never seems to drop out easily for me. Notty will finish way drier than both windsor and us-04.

    Pin Lock vs Ball Lock Height?

    I use ball locks, but I happened to be given a pinlock as a gift a while back. Ball locks are a bit smaller in diameter, so I can fit more. FYI - my ball locks are 25.5' high with QD and have 8 3/16' Dia. the pin lock is 24" with QD and 9.5" Dia

    Insane evaporation rate

    That's the same evaporation I experience. I always start with 7.5 gallons preboil to hit 5.5. I just did a 90 minute boil today on a barleywine and started with 8 gallons to get down to 5.5. It took me quite a few batches to accept the fact that I boil off 2 gallons in an hour.

    I'm just a few minutes into the mash of my first Barleywine - my mash tun is at its limit! I figured my first barleywine should be the 9-9-9 recipe. It will join the 8-8-8 RIS that's been aging in the beer closet for the past 4 months.

    Natural Gas. Pipe size and placement

    I absolutely agree with BobbyM on the 3/4" If you have to pay someone to dig and bury, there is no reason not to go big. You don't want to find out later that it was too small.
