    What's my wine missing

Definitely hoping on that fact that time will improve it

    What's my wine missing

Don't know about where they were sourced, just that it's Johannesburg reisling. Also, directions on can is what I followed and it did say add sugar. I did add as directed and reached the OG on order to get 10%abv as indicated. As for adding some acid blend to a glass, I will definitely follow...

    What's my wine missing

Never did get a titration kit. When I mentioned the wrong yeast for the blackberry....I used AMH thinking I'd get some fruit tones but spiciness as well but it didn't happen that way. Also I was advised later from a more experienced maker that he uses sweet mead yeast on his fruit wines to...

    What's my wine missing

The 'wrong" I think is that I feel it has a bit flat. It has some sweet to it but bitter too. I'm hopeful it'll lose the sour over time. I made some hard cider that was so sour first two weeks in bottle you couldn't stand it but after four months softened.

    What's my wine missing

First attempt was a blackberry wine. I used the wrong yeast and it turned out dry and "hot " with too much alcohol present. Now I have a bead on a sweet mead yeast that I'll try when doing this again. My second wine that I just bottled was a reisling from concentrate. Followed direction on can...

    IPA and safale 05

Yeah the issue was my zero experience with safale 05. But today is the 2 wks waiting period and I am having one now and it's pretty good. Nice hoppy IPA. The only thing I'd like is too see it a bit crisper. I used Irish moss and idk, maybe that just the way this looks. Enough critical...

Oak sticks on a pinot or other reds?

Honestly I don't really know how much oak I like. I am a fan of commercial pinot noir. At this point that's all I know. Also a big fan of reisling and gewertztraminer for whites. So I guess I'll go with the suggestion of 2 oz per five gallon. Time frame I'll start with it 30 days. Maybe keep...

    IPA and safale 05

It's all good. It totally worked if you read through all the post. Yeast work more than expected. I bottle tomorrow. Hit it with a 5 day dry hop. I held back from doing the 7 day bc when I smell it it's pretty hoppy and tastes bitter. I wasn't sure it really needed the two extra days. So keep...

Oak sticks on a pinot or other reds?

Helps a lot. Don't think I'll be buying oak barrels anytime soon. Looks like a lot of $. Will definitely try the spirals

    Rubber stoppers for airlocks?!

Does anyone know if it's DONE fermenting? OG 1.080 and now two months later it's at 1.007. Used the wyeast sweet white yeast. Was curious if that's where it's finished at since it's supposed to be sweet not dry

Oak sticks on a pinot or other reds?

But for how long? 30 days, or am I just to keep sampling until I think it enough. Is there a basic standard. I don't want to pull then too soon.

    Rubber stoppers for airlocks?!

See if these other ones fit right. They never smell. ILL have to try boiling them if I have to use them again

    Rubber stoppers for airlocks?!

I found those bucket shaped stoppers that are claiming to be small enough to fit 3,5 and 6 gal glass carboy. "Small universal stopper" drilled. I use "medium universal" on my plastic ones. They don't smell at all. Hope it fits...

Oak sticks on a pinot or other reds?

Question is how many oak sticks/chips would you use to oak your reds or other wines. I plan on making some pinot from concentrate and I have toasted oak sticks that I'll want to use for oaking. How many per gallon and for how long? My sticks are about 3/4 x 3/4. Toasted not charred. Or does...

    Rubber stoppers for airlocks?!

    Don't really know.

    Rubber stoppers for airlocks?!

I want to ask a question about these. I have three 1 gal glass jugs and a 5 gal glass carboy. The 1 gal I only seem to get the #6 rubber stopper and the carboy # 6.5. I made blackberry in the 1 gal and now my reisling 4 gallon was just racked for the second time. Now in both these wines I'm...

Right about that....this thing went from no sign to too much.lol

    IPA and safale 05

That...was a first. The beer has calmed down and I was able to put an airlock on several days ago. That must be specific to S 05? Other yeasts have not foamed like that

    Irish stout kit

Keep updating. Got it downstairs now to forget about it. Dark and usually no higher than 65 in summer down there.

    Irish stout kit

Well, beer was sampled. Had a good carb to it. Formed a creamy looking head that stayed for a bit. Very drinkable. My brother said it smelled just like Guinness and was close to the taste. I liked it as well. I could pick up something in the background that I wanna see it age out. I do look...
