    Did you correct for the temperature of the water? The hydrometers are calibrated a a certain water temperature, like 60° or 68° for example. Edit: .998 at 74° would be 1.00 at 60°

    Can you serve at too low a psi?

    If you are getting foaming at 11PSI then you may not have enough length in the beverage line. Dropping it to 6 PSI may fix the foaming but over time the beer in the keg will reach equilibrium at 6 PSI and be under carbonated. EDIT: Have a look through some of these posts here

    If you go shorter just remember to adjust your boil off amount if you figured that into your volumes calculation.

    Also, have patience on these first few batches. Once you build up your pipeline with bottles in the fridge, fermented wort ready to bottle, and fermenters with newly pitched yeast the patience will come naturally.

    Great point. I had recirculation on the brain since I'm shopping for a eBIAB from High Gravity. Bag sits in a basket to keep it off the boil coil.

    @wilserbrewer can custom make a bag for that kettle I'm sure. As for the bag with the element, I've heard that the boil coil has such low wattage density that it won't burn, but I'd feel more comfortable with a false bottom.

    What kind of fermentor are you using..

    I'm using corny kegs. I take a hit on my batch size but I can ferment two at the same time in my temp controlled chest freezer.
