    Buy "The joy of homebrewing" by Charlie Papazian. It will help a lot! Relax have a homebrew. I would leave that beer in bottles at room temp 68 to 72 for another couple weeks before giving up on it. YMMV. Brew on TBT!

    Good experience with dry yeast. What are your tips?

    I also have had good experiences with US-05 & Nottingham. Just rehydrate as per instructions and pitch. I have washed both of those and gotten 4 5 gal batches with each. The only complaint I have with 05 is when I fermented at 63f it had really heavy esters.

    Where are the fruity esters coming from?

    I just did a blonde ale split batch US05 and Notty. 63 degrees ferment temp and th 05 has very strong esters. Have used it before around 68 and the esters were very pleasant. I will be staying in the high 60's from now on. Leaving it in secondary for a few weeks at 68 hoping itll clean up.

    Thanks for the reply Grognerd After further reading it appears this hybrid yeast will do fine either way. You can lager or secondary in the high 50's. Experiment time!
