    Tips for winter brewing?

Or brew inside and light a candle(s) for your wife. And clean up really well too!

    Over Carb now Low Carb

You could try reopening and using carbonation tabs. I've never done this, and you may have oxidized this beer by opening, transferring to a carbon and then again re bottling. But you only have some tabs to lose.

    1 GALLON starter?!?!

We could use a few more details. What is the batch size? How old was the yeast? No, you don't want to use anything but light DME.

    Grainfather!!

Well then, welcome to indoor winter brewing! You're gonna love it!:ban:

How many times can I use / reuse yeast

I keep it simple. Buy yeast, make a starter and pitch. Harvest yeast (I do have a conical so easy) into a boiled mason jar that was cooled and put into fridge. Next time I brew and want this yeast, I decant some of the beer off, swirl up good and pitch. Repeat. Repeat. Etc...

Sub'd. Wish I knew I've got a great one to post.

    Grainfather!!

This is a mistake. They should at least offer two versions- wit & witout (philly folks will understand that!). If the only available GF is now list at 1049 that's above a psychological $1000 line. Could create pause for new customers. And with competition like the mash & brew (or whatever it's...

    Programming a flashed STC-1000

You're welcome, yes, print out the abbreviations and expect to be annoyed until you get it, but remember the power button is the backout key!

    Programming a flashed STC-1000

By flashed, I'm assuming you mean for the STC 1000+ build thread that Alphaomega wrote, correct? I flashed one myself, love that it converted to F from C. Its a bit clunky, but it works like this. Power button is also the "back out button" (you will want that when you get lost, and it still...

    adding chocolate or any additions

I've added chocolate in the last 15 min of boil- baker's chocolate, unsweetened / debittered. I was doing a Founder's Breakfast Stout and used 4oz of chocolate, not 1-2# (for 5g, ~19L)! I did use 3/4# of chocolate malt in the mash. I also added coffee and felt it overpowered the chocolate. If I...

    First time full batch boil

I'd expect your recipe to suggest how much water for steeping grains, but if not, then I'd use a factor of about 1g to 1# of grain, though I wouldn't go over 2g/#. I'm an All Grain brewer and typically I mash (equivalent in a way to steeping, just less water) at ~1.5qts/1# grain. So your...

Is Secondary Fermentation Still Common Practice?

No, not at all. I did when I first started in '99, after my long hiatus I now never have used secondary in the last 2 yrs. Maybe if I did a sour, which I haven't yet.

    Grainfather!!

Yeah, that there is why I don't live there! I'm sure its nice for a few weeks (:)), but sheesh, not for me!

very close to ordering a Braumeister 20L...

Rusty, I own the Grainfather and love it, I hear you on the advantage of the 220V, but with a heat stick, you have the power for a strong one there-!- you could easily overcome that issue, and all your other issues are answered. Plus I've brewed over 6g with the GF and bet I can get to 7...

    conical fermenter

I dry hop in a bag, either paint strainer or hop bag. It goes right into the conical, if a NEIPA then early! While I do harvest the yeast, no reason to worry about yeast staying in throughout. The brew bucket is fine, in fact I plan on 2 (minis) for Christmas, I wish to split batches I've brewed...

American Porter Bee Cave Brewery Robust Porter

I brewed this on Oct 2nd, bottled on 10/22, 1st taste was 11/22 with a follow up tasting this weekend. Hit my gravity readings of 1.065 & 1.016. It tastes very nice, feel it needs a bit more maltiness to it, with ABV at ~6.4% I think there's certainly room to kick it up to say 7.5% or so, and...
