1.038 after 3 weeks and repitching

It's been about 30 hours since I racked the porter onto the yeast cake and its down to 1.028. Haven't seen any airlock activity since last night... Really hoping it isn't finished, this was an expensive beer, and its far too sweet right now.

1.038 after 3 weeks and repitching

If you have another brew going that fully attenuated you can try racking the porter on top of the yeast cake once you bottle the first one. I'm doing this currently with my porter which stalled at 1.030. Within an hour of racking onto the yeast cake (which attenuated a pale ale to about 85%) I...

    Man, I love Apfelwein

Oh My God... I just pulled the first sample of my first batch which has been in primary for 7.5 weeks without me touching it. This stuff is AWESOME! Waaay exceeded my expectations. It tastes so good I think I'm going to bottle it without priming sugar. Its fine the way it is, and now that...

    Beers in Burlington VT

The wait to get into flatbread can be bad, but it is 1000% worth it. Stellar food, and a great beer selection. Just grab one of their beepers and hang out at the bar until your table is ready. Switchback is one of the best beers around btown. Tastes great and is almost as cheap as bmc most...

    Dryhopping for the first time

Awesome, just what I wanted to hear. Thanks!

    Dryhopping for the first time

I tried my pale ale today (PM version of Ed's Haus Ale) and it was absolutely fantastic. It fermented much drier than my previous beers and already tastes better after 7 days than the rest did at 5-6 weeks after brewing. I feel that a little more hoppiness would kick it up another level and...

    Couple of temperature questions

Hmmm, that goes against what I've heard from the LHBS, and on here. Can anyone else comment on this? Also, how about temperature for bulk aging? Will I get the same benefits from aging my porter at 60 as I would at 68 as long as I wait until fermentation has completely stopped?

    Apfelwine question

Be prepared for a loooong fermentation at those temps. Mine has been sitting at 60-63 for almost 5 weeks now, and the airlock is still bubbling a couple times a minute. I used his exact recipe as well.

    Couple of temperature questions

When is the ideal time to boost up the temperature of fermentation to get those last few SG points down? I have a 12 day old 1.067 porter, and a 4 day old 1.059 pale ale, but only 1 water bath so I need to boost up the temperature on both at the same time. I checked the porter yesterday, and...

    True Brew Kit

I brew using a true brew kit, and all my beers stay in primary for 3 weeks then straight to the bottle.

    Should I be worried if......

Nope. Let it sit for 21 days, then taste one. Then let it sit even longer. I tasted my first beer at 6 days and it was ok. It was good at 3 weeks and fantastic at 6 weeks.

Possible to get an O.G. this high?

I'm thinking that bmw must have thrown me some extra grain or dme, I'm certain everything else is dead on

Possible to get an O.G. this high?

I made a batch of Ed's House Pale today as my first PM, the recipe is as follows: 5 lbs DME 2 lbs Vienna .5 lbs Caramel 10L I ended up with an O.G. of 1.059 when beersmith predicted an O.G. of 1.052 at 75% brewhouse efficiency. I made sure I topped off to 5.5 gal, stirred vigorously for...

    I did it!

Haha, this is so true. I never really cared for hoppy beers, but my brain was rewired the instant I dropped that first oz of hops into batch #1. Now I can't get enough of IPAs. It's also really cool being able to drink a beer and pick out some of the grains/hops that went into them based on...

How long did your first batch last?

I made the mistake of cracking open my first beer 6 days after bottling. I managed to have some restraint for the next few days, but by 2 weeks they were half gone. By 3 weeks I only had a 6 pack, and now (about 1 month later) I only have 2 bottles left. Tasting the difference in a beer at 1...

    How to use a siphon?

You don't need an auto-siphon. I tried to buy one and the woman at the LHBS told me I didn't need it and wouldn't sell it to me. It only took a couple trys and I had my siphon off and running. Now I nail it every time, just follow the directions others have posted in this thread.

How many gallons of homebrew in 2009?

    23391 +25 (zeppman) +5 Ed's Porter (extract) +5 Ed's Haus Pale (PM) = 23426

    Brewing Journal or Log

Anytime I do anything to the beer from extract/grain to bottle I make a note of it in beersmith. Addition times during the boil, what time I pitch, when fermentation starts, temperatures, how many bottles I get, etc. I find that the act of writing things down helps me remember all the little...

    oxiclean free vs. oxiclean versatile?

I've been using versatile for a while now with no ill effects. Just make sure you rinse with lots of hot water and give whatever you are cleaning the sniff test before using it.

    Beer finished to sweet

It'll mellow out after a few weeks in the bottle.
