    Favorite hoppy APA/IPA Grist

002 does a good hazy pale or lower ABV end of a hazy IPA, where you want lots of residual sugar. 70% attenuation is perfect for a 6.5% hazy IPA with an OG around 1.070. Lands you around 1.020 which is a good place to be IMO.

    Favorite hoppy APA/IPA Grist

007/1098/Whitbread Dry makes a fantastic American style IPA.

    What are you drinking now?

Well, it might have lost the popular vote as my contest submission for Illusive 's 9th birthday HB competition amongst my home brew club, but it's definitely the beer I'll reach for in a 33°C garden in the evening. 3.5% Table Saison with BRU-1 and Nelson. Also might be the palest beer I've...

    So who's brewing this weekend?

Depending on whether my bag of yuzu peel arrives from Japan in time, I'll either be doing a Yuzu and Sorachi Ace Japanese Rice Lager, or a DIPA with Centennial, Mosaic and Simcoe.

What I did for beer today

Bottled up a couple of my prospective competition entries to take to my homebrew club. Going to let the guys and girls there decide which one makes the cut as I can only submit one. 3.5% table Saison with Nelson and BRU-1 3.8% West Coast micro IPA with Amarillo, Centennial and Luminosa. Rules...

What I did for beer today

Kegged up my table pale with Amarillo, Centennial and Luminosa. Had the same weird behaviour with the Luminosa DH that I always get with Strata in that the super powdery, sticky hop matter ends up floating on the top rather than ever dropping out. Nothing the filter didn't sort out. Maybe it's...

English Ales - What's your favorite recipe?

I've never had tartness or weirdness with S-04, though I don't use it that much.

Another dry yeast vs liquid yeast thread - questions ands discussion

I'm pretty sure Cheshire has it right and I had it backwards earlier- Bond is a derivative of Whitbread Dry (so same origin as WLP007) and WHC have confirmed this. The origin of Old English is a bit fuzzier- if it was Gales via Hales as they claim (albeit caveated as "unconfirmed"), it would...

English Ales - What's your favorite recipe?

I mostly tried it there because I was out of Verdant and felt it was the closest thing in my yeast stash to it for a pale ale hopped with UK Cascade and CF184. It made a pretty great beer for a panicked substitution. I'd bought it to do NEIPAs with originally. During fermentation (warm, will...

English Ales - What's your favorite recipe?

I don't think they, or anyone else, has said HV is a "Lutra clone". They said it's "comparable", but also "comparable" with WLP001, which is very much not Kveik. Which I suppose is accurate, given its characteristics are pretty much equidistant between the two. I've done probably 15 brews with...

English Ales - What's your favorite recipe?

Mango Madness is nothing like any yeast I've ever used. It's 100% not kveik or kveik adjacent, no yoghurt tang or kveikiness, although they draw comparisons with Ebbgarden it doesn't have either the funk or the bitterness accentuating characteristics IME, though I will caveat that I have so far...

English Ales - What's your favorite recipe?

WHC have confirmed Whitbread Dry as the origin. IIRC, there's some debate as to whether S-04 is actually a Whitbread derivative, though it was often claimed to be one.

English Ales - What's your favorite recipe?

Bond is dry WLP007. Hence the name. So Whitbread Dry "B"

    What are you drinking now?

Very good moderns style WCIPA from Left Handed Giant over in Bristol. Krush, Nelson and Simcoe, very heavily dry hopped and bone dry.

    What are you drinking now?

DEYA Brewery - "Something Good #17" 8.5% DIPA with 28g/L (!) of dry hops, about half of which is cryo. Centennial, Krush and Mosaic in the whirlpool and Mosaic (Cryo, Hyperboost, BBC and T90) and Simcoe (Cryo and T90) in the dry hop. I've not had much DEYA recently as they got into a bad...

English Ales - What's your favorite recipe?

Köln is top fermenting (as all Kolsch yeasts are) but you're correct, it was never marketed as an equivalent to 029 per se.
