    What I learned when using cocoa nibs: they seem to be high in oil, but after soaking them for a week or so in alcohol (in my case, whiskey) the oil doesn't appear.

    @snuesen: Thanks! If I were to increase the batch size to 5.5 gallons, would I need to add more honey? @WVMJ: Thank you! Does the towel over the bucket need to be sanitized? Also, don't stir for step 10, but stir for step 11?

    Off-dry Blackberry Mead Help!

    Now that I think about it, if I taste and it's too dry after fermentation (before bottling) could I back-sweeten with a bit of honey (maybe .5lb or so)? And if I do, would I need to add something like potassium sorbate to inhibit yeast growth?
