    For me and the lagers I have a glycol chiller and my brite tanks are setup to be hooked up to my chiller. So I can do a closed transfer from fermentor to brite tank. I can then can manage the temps.

    Also, don't dump the beer. Keep for a few more weeks at least. Is there someone you can brew with as well I find having other brewers around gives me perspective on things in my process.

    It's not from old yeast. The reason you don't use old yeast is because it may not have enough active bodies to ferment the beer.
