    Agreed with everything above. I am a big fan of the starter, I make one every batch. For me adding a starter than recently adding O2 into fermenter right before pitching were the cheapest and most beneficial investments I made in my process.

    I brewed an Oatmeal Stout. Six brews in seven weeks. I have a DIPA on deck for this coming weekend. My pipeline was dry for a long time......not anymore!

    Does it matter which way I hook up this plate chiller?

    I doesnt look like there is a difference on that one. As long as you determine the input and output I dont think it matters. Once you choose I would leave it for each brew I wouldnt switch keep the water and wort consistent and you are good.

    Overcarbonated and too sweet

    With an FG of 1.012 it shouldn't be to sweet. I am not sure what your target was but 1.012 is a decent number. I would lean towards to much sugar during bottling. Especially if it is highly carbonated.

    Hopped a bit early

    Dry hops after 4 days is all you need. I have found you can leave them there for a couple of weeks and they don't impart different flavors much. I think you will be fine.

    Brewcommander Opinions

    I have the BrewCommander and the RIMS rocket. I love it. Easy to use and to dial in. With any 120V it takes some time to heat up the water but that is my only complaint and it really isnt a complaint. Just be aware.
