    So I completely forgot to put an airlock on my primary after it was done fermenting...Is this a problem? I'm racking the beer to the secondary Saturday night and then FOR SURE I'll have the airlock on it. I've had the blow-off tube attached and in a water jug so I don't think anything could go...

    That's a shame, the water in my area is considered one of if not the best in the state.

    I don't even add pureified water lol. I just add normal water. No problems yet!

    No I mixed the yeast that came with the kit with warm water like it instructed. That's what I was thinking too though, maybe it was the yeast? Like I said, my other kit beer was the same way; drinkable by all means, I'm not disappointed at all, just curious about that little bit of sweetness...

    Haven't checked the FG, I did kinda rush it though. I wanted it ready for the Super Bowl so instead of 6 weeks, I let it sit for 5. Maybe that other week in the secondary fermenter would have done some good?

    Just cracked open a bottle of my Dark Ale. Has a great head, nice color but it's more sweet than I would have guessed. It's a Coopers Australian Dark Ale kit so I basically boiled water to make it; I didn't add anything extra. Is that how all kit beers are or did I do something to give it that...
  12. Went to a good freinds house to help brew a Irish Red Ale in the name of St. Patty's day. He was kind enough to share with me his Amber Ale he brewed on Christmas. He used Amarillo hops so he named it, "Amarillo by Morning".

    Was going to aim for the 6.5-7% area. Still pretty new to brewing; I've done only 2 extract kits and one extract kit w/specialty grains.

    So I want to try and brew a Smoked Cherry Porter. Problem is, I'm kinda stuck on how to go about this. I want to do more than just brew a smoked porter and add cherry extract. If at all possible, I want to stay away from the cherry extract entirely but so far I can't find a way to do that...
