Looking for opinions on burners (Darkstar, Darkstar 2.0, SQ14)

I have the 14" banjo and I love it. The one thing I had to do is change the regulator as the original one would not allow a fine adjustment for the flame.

    Swamp Cooler Material

Cotton should work fine but make sure it's wet all over first and that should help get it started

keg liquid lines in between brews

In my experience the lines that haze were not not very good quality lines. The bevlex lines that I switched to now don't seem to have that issue. No slime or haze and I leave sanitizer in them for weeks.

    I invented a beer-tasting game!

Do over on the picture of the beer. Doesn't have any head or carbonation and definitely doesn't look appealing. .02

    Kolsch(ish) brew

I love this yeast and you're right, it will stick around for a while. Tends to be very big. After a couple weeks I usually jostle the fermenter and then cold crash. That usually takes care of it.

What to stir the wort with?

Paint stirrer in a Dewalt drill. Sanitized of course.

    1st time dry hopping

Dump them unless you want to harvest the yeast.

Ok to stir immersion chiller? How about hot wort through the immersion chiller?

I whirlpool with a paint stirrer on a Dewalt. Cools down fast, saves my arm and when I start getting around 100 I ramp up the speed and it starts aerating the wort. Has been working for years.

Watermelon Wheat - Cold Crash & Gelatin Fining?

I wouldn't bother but that's just me. I forget sometimes to add fining and it makes me mad until I taste the first pint! Lol

    Kegerator question

If you have an Airgas near you or a Welding Supply place, you may get lucky and be able to swap it for another filled tank without it being within hydro. I've bought 2-20 lb tanks now from Craigslist that were out of hydro and brought them in for a swap and they didn't even look at the tanks.

    Storage Ideas?

Wow, that looks like an awesome cabinet. Nice score! And it's stainless not aluminum? Either way it's a good looking cabinet.

    Brew day Numero Uno

A few issues but sounds like you're learning already. Under carbed and sweet might mean that you haven't let it fully carbonate yet. Could also have to do with mash temp but you didn't say if it was all grain or extract. Hot alcoholic means you may have let the fermentation ride up too high...
