Maybe a silly question but I want to stir the wort while using my immersion wort chiller. What do you use? Obvious answer is a metal spoon but I am worried about scratching up chiller. Have read that plastic spoons can harbor bacteria.

I use the chiller itself.
 
Same here. Grab the top of the chiller and swoosh it around a little bit. Or just raise and lower it a little.
 
I wouldn't be to concerned about scratching the chiller.Drop it in at flameout to kill any bacteria.I bought a greenish nasty roll of copper that was sitting in some guys garage for what looked like forever.Cleaned it up and been using it ever since.
 
I use a long handled plastic spoon for stirring my 'hopstand'. Remember, if the temp is above 160 F, it sanitizes in seconds.
 
I use a SS Paella spoon for everything. No problems. But you can just use the chiller.
 
Buy a pump and use the hose to recirculate the wort for you.

I've used the chiller up and down to help oxygenate and aerate wort. Recently I've been using the metal spoon and never worried about scratching copper because I sanatizer my chiller in the boil.
