    How to fix my blunder

Leave it alone. Let it ferment out, maybe let it age a month or two, and then bottle or keg, and drink. You might find you like it just fine. Chalk it up as a lesson learned for next time, but the more you try to fix this batch, the more harm you'll likely end up doing. Just my 2 cents.

What did I cook this weekend.....

Every Easter, we have a spiral-sliced ham, and the next day, I make a batch of slow-cooker green beans, and in with the fresh green beans, I include the ham bone from the day before, along with some water and seasonings. Takes about 9-10 hours on low to cook, so I put everything together in the...

WLP001 or WLP051 for an imperial stout?

Use the 001, build a good-sized starter (1 gallon wouldn't be too large), and decant the spent starter liquid before dumping the 001 into the primary. For a beer as big as Expedition, you'll need as much healthy yeast as you can.

    Brewing In The Rain

Welcome. And, it's fun to brew when it's raining or snowing. (Coming from someone lucky enough to have a garage to brew in).

    So who's brewing this weekend?

Sunday morning, I will brew the latest version of my Dopplebock. Munich, Pils, and some crystal to an OG of ~1.090, with Magnum for bittering and Hallertau for flavor/aroma. A slurry of 34/70 lager yeast will do the heavy lifting in the primary, and after primary is over, a nice long, cold...

    Best hops for a saison

In the saisons I've brewed over the years, I've found that noble hops, such as Hallertau and Sterling (sub for Saaz) work quite well. I've also used East Kent Goldings numerous times, which also worked well. A couple suggestions: keep the hop character (bittering/flavor/aroma) restrained...

    Memorial day...who's brewin'

Just put an American Amber Lager to bed. 2-row, Munich, and C-40 to an OG of ~1.059. Magnum for bittering, and Centennial for flavor and aroma, for a total of ~40 IBU's. A slurry of 34/70 will do the heavy lifting in the primary. Bklmt2000

    New guy from Cincy

Welcome to the obsession. Yet another Cinci brewer here (northeast of dwntwn Cincy). Been homebrewing over 10 years now, started with extract kits, been all-grain brewing for the last 8+ years. It might start as a hobby, but you'll be surprised how soon it becomes a bit more than just a...

    So who's brewing this weekend?

Sampling my Imperial Oatmeal Stout on nitro. It's sublime, one of the best beers i've brewed in 10+ years as a homebrewer. And at ~10%/vol., it's a sipper, no doubt. Bklmt2000 :mug:
