    For me, I usually see pressure within 12-24 hours, but I haven't really watched to see exactly when. I use a 7.6G kegmenter which has plenty of headspace for the beers I've made so far, never had krausen enter the line to the keg.

    Right on, thanks for the insight. I knew it would be a little green still, but I just HAD to try it. Yes, I force carb'd it, set to 29 psi for 24 hrs or so. Honestly it is still a bit under carb'd but decent. Since this is now my favorite style, I really should get another one in the hopper...

    Although you can't be sure based on the number of days, I've never had a batch ferment for that long. For me, fermentation is complete within a week. But to be absolutely certain, you need to take readings a day or two apart. Once they plateau, fermentation is complete.
