    CHeck out this recipe... I have a question

    if you still want to boast the abv, I'd add extra fermentables to the primary. I usually use just plain dextrose, but I know that there are a few places (Austin HomeBrew for one) that sell a special mix of sugars that boast abv without changing taste.

    while I have never used them, I've seen a lot of people here say to use them to make a bourbon cask ale or something similar, or use them to replace oak chips. Just make sure to sanitize the chips before hand. Try the search function, there's actually a few other topics on this.

    I think Senor has a good idea, start with the micros, and brew on your own, and invite your regulars to a monthly "tasting" where they pay an entry and get free beer (a few cornies depending on how many regulars) and eventual the money man will see that you have a huge line on your "tasting"...

    the apartment brewer

    Not only am I an apartment brewer, but as a college student I have 3 other roommates who get mad when I make my wort, and only have my closet to store primaries/secondaries and under my bed for bottles. Still, the most annoying thing is the crappy electric stove that barely gets a boil going on...

    Forgot to answer these: I'd do a 1/3 late extract addition (guess I should have put that in the recipe) usually with about 10 minutes to go. I do a 3gal boil. Obviously I'd have one hell of a starter going.

    Apfelwein doesn't require a boil?

    The main draw back to putting 3gal in a 6.5gal fermentor is that you have 3.5gal of empty air. Trust everyone on this board and just fill the whole thing up, it's worth it... from what I hear, mines still fermenting.     craigshelper was able to search many different sites/locations at once. Once you pick the state, wait for it to load the cities link right below it (atleast that's the way it was for FL) It's not much help, except it lets you look at a couple cities at once... still nothing good up though...
