    Should I use both yeast vials?

    Why don't you use the fresh yeast to make your 1.5 L starter then use the expired yeast to make a 500 ml starter you can then step up? Two pitches.

    Moving wort around

    I only do 5 gallon batches but think that besides the added risk of wild bacteria due to the extra transfer you should be fine. Dumping your wort in the conical may help with aeration.. only one way to find out. Sent from my iPhone using Home Brew
