    I have a thick creamy layer of yeast in the bottom of my starter flask. Tonight I do see signs of a bit of co2 coming off... but nothing like what I expected, will watch for a while. I cooked up 5 gal of a 1.046 IPA this morning, just dumped in a dry yeast packet so now waiting for signs of life...

    Apparently the stuff isn't 'viable' for some reason. This morning there is no sign of activity in the starter I made.... other starters I've made from dry yeast were frothing well after 12 hrs. Guess I'll just try this again when one of my primaries is ready to drain.

    I keg, not bottle, but I'm pretty sure you do need to gently mix in the sugar water in the bottling bucket, using your racking cane gently so as not to splash. I assume you waited 2+ weeks to open bottles, and used 3/4 cup sugar mixed into boiling water then cooled....

    I use oxy clean on everything. You can clean/rinse/sanitize the dip tube and outlet post by pressurizing the keg and running the cleaner/other thru it. I don't see a real need to remove the posts every time if cleaned immediately after emptying, we are running an alcoholic beverage in there...

    So far northernbrewer is my favorite, only because it seems like best pricing to me. I am half way thru a keg of Irish Red that is wonderful, it is $20 and sometimes they run different kits at 10% off specials, a different special every week.

    visit the northern brewer website and you can see the whole kit inventory and instructions for all kits they sell. I have been buying the ingredients separately which leaves plenty of leftover grains to experiment with.

I have a 40qt pot but on other advice I've been mostly boiling up 3 gal in order to more quickly cool the wort. I'm wondering about the effects of increased cooling time for the full boil .... but...
