    Most of us no longer use a secondary unless lagering or other special conditions. The risk of infection and oxidation out-weigh the benefits for most.     I have one on tap now that is quite good. I fermented at 64, then brought it up to 70 for a few days, then down to 40 to let the yeast settle, then back up to 61 before dry hopping.

    A dip is not enough IMHO. I use a little elbow grease and don't forget to rinse WELL after PBW.

    I've had a burner for almost 30 years. When I started back into brewing I was getting a lot of soot on my pot. I went over the burner with a steel brush and cleaned up the surface rust (in storage for 15 years or so - maybe a few turkeys fried with it). It's performing like a champ now, no soot...

    I have been doing a lot of US-05 and S-04 and a few different NEIPA yeasts (Wyeast 1318 London Ale III, OYL200 Tropical IPA, etc)

    I have done it with no issues. Measure out the priming sugar carefully and keep it cool and you should be fine.
