    Since you are using gas, did you consider a commercial tankless water heater in pace of an HLT? The high-end residential ones can go to 180F and are 83% efficient, and the mid-range commercial ones are 92% efficient.

    As long as you vorlauf properly you should be fine. You only have half the alrea on the screen as a proper false bottom. Therefore, you _may_ experience stuck sparges when mashing with wheat, oats, etc...

    What size brewpot to prevent boil over?

    How about a thermocoupler and using an audible alarm 3 degrees prior to boil? Watch it closely for 3 degrees and fine-tune the heat for a steady rolling boil.

    Caustic/Sodium Hydroxide

    Lye/muratic acid are great cheap and no-elbow-grease solutions for organic/beer stone removal in stainless kegs. Use the appropriate safety gear and have baking soda and vinegar handy in case of spillage/accidents! Happy brewing!:mug:

    10 gallon SS commercial vs. keggle. Please help me decide

    I've found the lip at the top of the keggle is great for helping to keep a very full pot with a proper rolling boil. Without the lip, the container can not be filled as full. I dare suggest the lip helps to better prevent boil-overs.

    I use: http://www.mcmaster.com/#51735k29/=andrh4 ( Part Number: 51735K29 at mcmaster-carr ) You can see the liquid levels and it's FDA/USDA certified. I accidentally went a bit overboard, but it doesn't collapse when running almost boiling wort through it....

    I started kegging ~17 years ago and have never looked back. When I do use bottles, I move it from a keg into a flip top bottle. If you follow some common processes, you can get carbonated, sediment-free beer into bottles.
