if you're going to zest the orange yourself, avoid the white pith as much as you can. I tried an orange stout awhile back and the pith was overwhelmingly terrible and I don't believe i used too much. I would maybe even go as far as using orange extract or oil at bottling or secondary.
I would get quite a few brews under your belt before attempting a lambic. To even get the mash right, you need to be at least an intermediate level brewer (some all grain experience) to even understand what is truly going on during the process. I would be afraid that you would waste a year...
I had recently created a Margarita Gose too, using a very similar method. If you want save a few bucks and can find it, use GoodBelly Lemon/Ginger SuperShots. They are about $1.50 each and contain 50B cells per Shot.

Also, there are a few cheaper options out there than buying yeast/bacteria pitches from your LHBS. I've had good success using the probiotic GoodBelly shots. They're about $1.50 each.
Are these all in separate bags or mixed all together? What yeast and hops do you have on hand?
