    Looks like I'm not moving out of this house for a while. I added 5gl of a 6month old beer the was fermented with ecy20 bug blend. Its been slowly chugging away.

    Yeah its a 2012 Girard Cabernet Sauvignon. At least that was the last batch of wine that was in it. I'm not a wine drinker so I don't know if that is a good wine or not.

    Primary sour fermentation in stainless? Ferm temps?

    I've used ecy01 and split it in two 6.5gl carboys, and the fermentation was not bad at all. 2-3. inches of headspace was all I needed. Two weeks later I put that 10gl in with 40gallons of wort in a 55gl barrel and again the krousen was not bad at all.

    Sour Stout...maybe?

    Rosalare has everything you need to make a tasty sour. I've had a couple of sour stouts and was never impressed, the roast and sour clashed. my vote is to brew up another pale beer and do a full 5gl of sour beer. Just my 2 cents.

    thanks for the replies, I think that I'm not going to do primary in the barrel. I have enough carboys to easily ferment 40 gallons. thats not counting the 10 gallons that I was going to inoculate the barrel with. that will only leave me 10 gallons short of the 59 mark. i could buy a couple...

    Horrible smell/taste - 3 batches in a row

    +1 when I first started I had a bunch of bad batches that tasted like vinegar and dog crap, i solved the problem by tossing out everything that was plastic that had contact with the beer. buy a new fermenting bucket and racking cane/hoses for sure. good luck. look up you closest home...

    So I am going to brew a lambic/american wild ale. That being said i'm going to fill a 59gl wine barrel by myself. I plan on doing two double brew day of 11gl batches of about 1.072 wort. So i will end up with 44gallons of 1.072 wort. I will then delude the wort with about 12 gallons of water...
