I was using carbonation calculators and aimed for 3.0 of carb for my hef. The calculator gave me 35.2psi at 68F which is the average temp in my beer room.
From what I understood it didn't matter how long I left it attached to the CO2 tank, at 35 PSI and 68F...
So it could be the serving line. That was the last variable I was considering. I'm gonna pick up a long line and see if that helps. Thanks for the help. I'll let everyone know how it goes.
I'm here in Los Angeles, and my biggest problem is always my beer room is too warm to ferment in, so I have to use a Chest freezer to keep a constant temperature.

Craigslist and Yardsales can be your best friend. Also at Walmart & Amazon they sell a 32quart (8gallon) pot by Imusa for about $24-$25.

I got my 10cu FT chest freezer for $40 on craigslist. It was 6years old and runs like a champ. Keeps all my fermentation at a nice 66F. One day i'll get to trying out a Lager.
You could use the extra wort to farm more yeast for future brews. Just pick up 1-2 one gallon growlers, with some rubber stoppers and airlocks. Or you can do the tin foil caps. But when I farm yeast for long term storage I always like to be extra clean, so I use airlocks.
