Awesome! Shame you lost half but great that saved half!
So patience is the game I'm gonna play as I plan on aging anyways.
If there's no action by the time summer comes around then I guess I'll give the champagne yeast a bash.
If that fails j guess I'll have some kind of dessert wine on my...
Ah! Maybe that's the way forward for me. I don't have time to be patient haha.
Might add champagne yeast to half and then wait and see how the other half turns out on its own. Funny that as I've bottled about 3/4 of it in champagne bottles.
Thanks for the tip!
Thanks , I thought that it might take a while to carb but the 10% barley wine it's standing next to has carbed up already.
WLP530 was my original yeast and the bottles are standing at a constant 20degrees Celsius/68 Fahrenheit .
Patience I guess is what's needed here my dear friends. Thanks...
Hey all!
I brewed this bad boy up and finished at11%abv.
I bottled about 2 months ago hoping to age over several years to see how it matures.
The brew tastes amazing but still hasn't carbonated. I think possibly this is due to a very long secondary at about 12 degrees Celsius which led to the...

This is smelling great in the fermenter. Going into secondary in a few days.
Just wondering if I wanted to to a half batch of this or any other beer for that matter , is it just a case of halving the recipe ?
First sample today as I went into secondary.
Very malty and a nice change from what ive been brewing lately. ( super hopped, playing with base malts and hops)
I'm curious as to how the cascade will transform it. I guess I'll just have to wait 7- 10 days to find out.
So far , so awesome.
I...
How Important is the flaked wheat in this recipe. My Order arrived today minus the flaked wheat as the supplier is out of stock.
Is there something I can do, short of waiting it out until its in stock again?
Thanks in advance
Slainte!
Just cracked one open. Finished at 5.6% ABV tastes great with big hops. The caramel came through with the reduced wort addition.
Thanks for the great save Quaker.
Howd your experiment turn out?
Went into secondary yesterday with an test OG of 1.010. That US 05 is a workhorse!
Tasted ok but I could detect the alcohol quite easily, felt almost like drinking a weak vodka.
I had another beer turn out like this though and it mellowed out nicely for the hops to shine. Let's hope does the...
I followed the OPs recipe excluding torrified wheat.
2 weeks later I've hit 1.012 and looking at 6% ABV
Gonna let it ride out another week to see if I can squeeze some more alcohol out of the us-05.;)
Tastes ok, not super appley but quite well balanced so far. Hopefully the apple will become...
Hej, got this on the stove just now( minus AJ of course).
Just wondering how I'm going to work out my abv.
I'm going to take a sample of the wort and measure OG and also a sample of AJ and measure OG.
Finally a sample of the wort/AJ mix for OG.
Which OG do I go by in 2weeks time to determine...
Thanks man, unfortunately I had no patience and ended up ordering
Cara ruby 50 - (castle malting) EBC 43-57
Cara blond 20 -(castle malting)EBC 18-22
Crystal 100 -( Viking malt) EBC 100
Thinking wrongly that I would land somewhere quite near the recipe by just bumping up the 20 and 50 whilst...
Brewed it this morning, looked really blond when I took the OG reading so I'm quiet happy about that.
Turned out a bit higher than I expected at 1.062 at 22celscius , was looking for about 1.050 going down to 1.010 with this yeast but decided to leave it an see what happens.
Could be great...
