Coconut water is kind of nasty on its own in my own opinion. I think flakes would work a lot better. Maybe the pineapples werent ripe or the temp got to high?

The lage ending up coming out fine. At first it was undercarbed in the keg. Then it was fine. Although a soapy flavor came in for a week at some point or so and disappeared and was back to normal.
All gone now. Very happy how it turned out.

An update.
It came out smelling like bad watermelon, however it tastes just like water melon juice.
The clarity is very good. Will need to get a little more bits out however.
My next plan is to use hibiscus flower to maybe lighten the smell up and change the color.

Yes. I anticipated that I was hoping for a flavor but I should of used flakes or the other suggested idea of using coconut water.

Raising the temperature and cold crashing the the brew to a really low temperature. Unless Im using the wrong word.
Will take note if there is an odd smell.
Checked today and the yeast was slow to start. All good now I believe
