Anyone care to share their recipe of Liberty Ale? I've seen the same questionable recipe floating around but nothing tried and true. An extract version would be appreciated.
Is there any benefit to using Weyermann LME over any other LME?
For instance, is there any reason one shouldn't use any other brand wheat LME to replace Weyermann Bavarian Hefeweizen liquid wheat malt extract? Would it be any less of a hefeweizen?
I'm not sure exactly how fresh my ginger is. I ordered it from breworganic.com a month or two ago. The packaging says for a subtle ginger flavor, use 1/4 to 1 oz. I think I'll lean toward the lesser amount after hearing your feedback.

How are these working out for you? I have 6.6 lbs of Northwestern Weizen LME that is nearly 1 year old and I'm trying to decide if I should keep it or toss it.

The 3 lbs 2.4 oz comes from Northern Brewer - their own brand of LME comes in 3.15 lbs (no idea why) and 6 lbs.
