    Spiced Bourbon/Milk Stout?

I have not brewed yet. I do like the idea of taking some milk stout and adding some bourbon to it to test out. In fact, I have some of the base beer I brewed a while back, so I'll be testing that out this weekend. I'll update with results!

    Spiced Bourbon/Milk Stout?

I've been looking through and brewing some of Randy Mosher's Radical Brewing recipes. There is one I'm planning to brew, from the 12 beers of Christmas, Spiced Bourbon Stout. It's suggested to use your favorite stout recipe, which I have one I've made multiple times with success and enjoyment...

    Raising Fermentation Temperature

Their site said to pitch at higher than fermentation temp, and their rehydration was up to 84 deg. I pitched at 83, then turned on my chiller to drop to 60. This took a bit, as I set it, then had company over and about 4 or 5 hours later found it at 83 still, as I apparently didn't get...

    Raising Fermentation Temperature

I've read about, and even experimented a little regarding raising beer fermentation temperature after three to four days. I've tried raising 1 degree per day, and have read everything from 0.5-2 or even free rising to room temp. I'm using S-04,which I pitched a bit warm then dropped the temp to...

    Sweet Potato Pie

That's the exact process I was looking to do. I was considering putting some flaked barley or possibly an addition of a lowér crystal to help, although neither may with the oils. 158 was my initial thought, would you suggest around 154-156?

    Sweet Potato Pie

I recently watched a Basic Brewing Video where they brewed up a basic beer as a base for "pie crust," and it got me thinking about combining with a sweet potato beer I had a while back, to make a sweet potato pie beer. I've roughed out a recipe based on the video, combined with a sweet potato...

    Forgot Some Hops

Decided to try a hop "tea." Boiled 6 cups water, 2oz at 18min and 2oz at 10min. I went back and forth on adding DME, and eventually decided to go with none, to keep it simple. We'll have to wait and see how it comes out now...

    Forgot Some Hops

Another possibility I forgot about is hop extract. I have not used before, and per the instructions is need to be added to the boil. My thought, boil it in a small amount of water to sterilize, and loosen, then add to primary. Does anyone have experience with the product, or know if this would...

    Forgot Some Hops

I had though of a hop tea, however, seen mixed reviews on how it worked out. I had not thought about taking some beer out and re-boiling. How much would you suggest, one gallon or less enough? Or, maybe a small starter, I have a small amount of headroom in my fermenter.

    Forgot Some Hops

Well, actually most. Brewed a 7 gal Old Ale yesterday, with two additions: 2.7oz Fuggles at 90min, and 2.9oz Fuggles at 10min. When going to the freezer this morning, I found 4oz Fuggles still there, and realized I measured out the fractional parts of the additions, forgetting to pull out the...

No Movement with Added Fermentables - Safe to Bottle?

I boiled the water to sterilize it, then cooled to about 120, then mixed with the honey. It appeared to mix well with the beer, and given my Tilt indicated a gravity of 1.005 before adding the honey, and 1.011 after, I'm believing it mixed pretty well. As for adding yeast, how many packets...

No Movement with Added Fermentables - Safe to Bottle?

I will look into the CBC-1 to add to the fermenter. I heated the honey with water, similar to making priming sugar, added it to the secondary fermenter, and racked from primary onto the honey-water mixture.

No Movement with Added Fermentables - Safe to Bottle?

I do want to bottle this beer, so it looks like my option is some higher alcohol tolerant yeast, or kegging and bottling. I do have a keg I could bottle into, although I do not have a way to bottle from the keg yet. Given I have honey in the batch, would it be better to keg, then bottle for...

No Movement with Added Fermentables - Safe to Bottle?

I have been using my Tilt for during fermentation readings, which appeared accurate at pitching. I forgot to take a sample when racking to secondary, so I a going with its readings for FG. I have not bottled yet, the beer is sitting in secondary at the moment.
