    Thanks for the replies! Looks like I'm gonna practice some patience. I'll update on the beer at bottling and after carbing for anyone else with a similar situation.

    I just drew a hydro sample and the smell was there but more subtle, not sure if the agitation scrubbed it away with CO2. The beer tastes good but the sulphur is still there behind some other nicer fermentation flavours. FG is 1.006 down from about 1.060, I'm not very good with diligent note...

    Extracting color from hops.

    IMO using hops or anything other than food colouring would probably be a waste of money. A neat idea, but I don't know if I'd be okay with paying for hops just to use them for colour... 944play: That looks freaky!

    +1 on DementD. basic economic theory: more demand means more supply, and, often as a way of ensuring company survival, higher variation in product. I want more people drinking craft brew in my area, maybe the LCBO will start opening their eyes to the fact that people want interesting beer made...

    I just bottled my second batch earlier today, maybe about 6 hours ago the last cap was put on. I'm putting everything away and just out of curiosity squeezed two of my plastic bottles and they felt firm already, I opened and recapped them, shook them up and from the gas released from that alone...

    Personally, I pour more aggressively because I want to get more CO2 out of solution, the bite just takes away from the flavour IMO. As for why I want the head to stick around? It's purdy.
