    Why is it that when I plug in a month old viability for a 6 gallon 1.067 beer with intermittent shaking, that it tells me to use 2 packs in a 1.28 liter starter? Couldn't I step up a single pack? How do I figure out the amounts to step up?

    Also for the mash temp, I preheat my oven to its lowest (170) then put the pot in there with the top on after I put the grains in and get to my mash temp. I turn the oven off before I put it in. It just barely fits on the bottom shelf.

    You could split the mash, but then combine before you start boiling. You could also mash as much as possible, then sparse until you get the required pre-boil volume. That's what I do for 2.5 gal batches in my 5 gal pot. I just mash around 3.75 gal with 6.5 pounds grain, then squeeze the heck out...

    Are you using that dry hopper to dry hop in a keg? Are you suspending it halfway in somehow? The pics on stainless brewing make it seem like it is suspended somehow, but I was wondering if that is included (or even needed).

    I get a stale taste if I carb with high psi. Instead I prime with sugar, just like bottles, then in 2 weeks hook it up to co2 at serving psi.

    Inside means there is one less entry point into the inside to allow for the cold air to escape, otherwise having it inside just takes up room for more kegs or bottled beers. It's totally up to you.
