    What I did for beer today

    Today I close transfered a partially carbed beer into a new keg after realising the lid was leaking. Went so far as to blast in co2 while exchanging said lid and gasket for another Only to realise it still leaked. So transfer to a known good sealing keg and figuring out and pressure testing...

    First ever imperial stout, never really tried to go huge with them. Not as strong as I hoped (7.88 %) and head retention (could be the glass but im not gonna make that excuse)is not that great. But the flavour is delicious and Im happy about that.

    I will note, sheepishly, that apart from washing the fruit prior to peeling i didnt do anything such as vodka or wtv to mitigate the risk of wild yeast. It all hung out at 210ish temperature for 10 -15 before chilling while i did some ****, i figured it would be enough to kill anything off.

    So I brewed up a gose yesterday (4 lbs pilsner, 4 lbs white wheat malt), at 0 added lime peels, orange peels and coriandre, salt. Chilled to about 70, pitched a single pack philly sour (which i am gather now may have been an under pitch?) and threw it into my fermentation chamber set at 75. OG...

    Pale ale, 6.17abv. Cascade/mandarina bavaria. Im never patient enough to let beer sit and clear, probably by the end of the keg it will look nicer. kegged 5 days ago.

    Guess its a hazy pale ale.5.8% galaxy mosaic. Intended to add biofine and clear it up but then didnt bother. Fruity and tasty

    7 day turn around with lutra. A quick and dirty stout to fill the lines until my next brew day. Too clean, as to be expected, very roasty. On the dry stout spectrum 5.3%
