but isn't bitterness different than sweet? maybe my palate isn't very well advanced. I generally know when my kits come out balanced. I replied to another post thinking maybe it was yeast attenuation.
I suspect you're right. I think the temp in my beer room (garage) has been a little too low. I might try pitching more yeast and look to get to a lower FG.

Depending on the quality of your yeast, fermentation should start off strong and maybe begin bubbling in only a few hours. The first 24 -36 hours should be pretty busy but I've got a batch of ESB still passing the occasional bubble after 4 days. It should be done in another day.

Hang in there. My inlaws ran the strictest house for holiday gathering until the "outlaws" as we call ourselves started exerting our presence. Now we can openly enjoy wine. I still sneak around with the flask... but it's all good. Just takes time.
I haven't seen anyone comment on this, but how are you carbonating? Are you bottling or kegging? Do you have "flat beer with a head"? I spent a long time brewing before I realized the importance of following the carbonation rules for the kind of beer I brewed.
