I would drink some now, take some notes, and then let the rest sit for a couple of weeks. Now you can compare the current beer to your notes. I find that my beers tend to mellow a bit with some cold conditioning. (all the flavors mingle) Just my 2 cents
I'm not sure what his price is going to be. He wants to produce a high quality stand that is priced very reasonably. I will post his contact info soon.
The height of the brew pot is perfect. You just put your carboy on the ground level and then connect a hose to your output. As long as the end of the hose is lower then the bottom of your pot, the siphon will drain it all out. I will post some more pics soon.
