remember, head-space doesn't have to be a bad thing. Head-space of oxygen yes, co2 no.... do you keg? if so you can always put a co2 blanket on it if you dont want to add juice.

Your sugar is good... your temp is good... your yeast is good... Dont worry or I should say RDWHHB lol Sometimes I get crazy bubbling and sometime I get lighter bubbling... Ive done prob over 50 batches of cider and fruit wines... trust me, your fine ;)
