    That will work fine. The hot plate should only pull around 10 amps (1100/120), unless I am mistaken. Just make sure the trigger side is the right voltage range for your controller/switch.

    Anyone go from kegging back to bottles

    I have been kegging for 6 years. I still bottle some styles like dunkelweizen and you can't beat the portability of bottles. Still I can't imagine wanting to clean and sanitize 52 bottles rather than one keg. I guess to each his own.

    Congrats! It looks good. Did you have any issues with the sight glass? I had to put a heat shield under mine. The plastic was getting too hot. Some vendors sell them, but I just used a thin piece of sheet metal. It made a huge difference in the heat measured under the fitting.

    That gravity seems high, but it totally depends on your malt bill. You could have a lot of unfermentables in there. I would still add the corn sugar for bottle conditioning.
