Homemade malta from extract?

I've recently taken a fancy to malta soft drinks. I like Goya, Hatuey, and the generic store brand that's available near me. I know some people think it's gross, but I enjoy it.

I have been able to find very little malta-related info here on HBT, mostly people using it when making a yeast starter. I also found an all-grain recipe, which I think is a bit beyond my current skill level.

I was wondering if anyone has tried to make a malta-ish drink starting with LME or DME?

I understand that I could just not ferment and drink any wort that I make, but I was curious to know if anyone has tried to match the commercial brands in flavor.

I recently visited the east coast and discovered Malta. I plan to make a gallon of wort and pitch yeast and immediately bottle it using at least one plastick bottle so I can gauge fermentation. As soon as the plastic bottle is hard I'll throw them in the fridge and drink within a couple days to avoid exploding bottles. That's my plan.
