Partial Mash
mashed 90 min @ 150F
Raise to 170F over 10 minutes
Steeped at 170F for 10 minutes
yeast was pitched @ 70F

1 kg of malt extract was added to boil @ 50 mins (10th minute of boil)
7 kg of malt extract was added to boil @ 10 mins

Fruit/5 gallons:
-1 Kg dates
-0.3 lbs black raspberries
-1 kg red raspberries

I will age in three separate 5 gallon carboys for one year
Carboy # 1 - Roselare
Carboy # 2 - Lambic Blend
Carboy # 3 - 50% Roselare and 50% Lambic Blend
 
I adapted this from the Requiem Raspberry Recipe.

I'm not really sure how this beer would be categorized?...

My recipe doesn't correlate to style guidelines for lambics...I guess time will tell how it turns out.
