What the hell keeps the fruit from fermenting? I tried google a little after my mind exploded.

Yes but the bacteria can ferment the fruit.
I would have to guess it is the fact that it is kept cold. Take out a cup and let it sit on your counter for 10-14 days and see what it tastes like then.
does the yogurt definitely contain live active cultures? Some doesn't; the label will specify if it does or not.
